The drive out River Road past the levee wall and the refinery towers doesn’t exactly scream destination dining. That changes the moment the smoke hits the car vents somewhere around Luling.
Gonzo’s Smokehouse sits at 13899 River Road, and the smell finds you before the sign does. Pitmaster Jason Gonzalez spent years as a structural designer in the oil and gas industry before trading that career for an all-wood-burning offset smoker and a serious obsession with Central Texas craft barbecue. He’s been competing in cook-offs since 2016, traveled the country studying pitmasters from Austin to Fort Worth, and opened Gonzo’s in January 2020. The place runs on wood smoke and family, with three generations regularly behind the booth at festivals around the metro.
What comes off those pits is genuinely worth the 30-minute drive from the city. The brisket leads the menu, slow-smoked with bark that holds its char and fat that renders into something close to silk. The burnt ends get cubed, caramelized, and finished in a cherry cola BBQ sauce that hits sweet before it hits smoky. The sausages are house-made. The boudin is smoked brisket boudin, which is exactly what it sounds like and exactly as good as that sounds.
Gonzalez also runs a house-cured smoked pastrami tri tip when the schedule allows, hard-seared in beef tallow and topped with pickled mustard seeds. That kind of menu detail tells you where his head is at. These aren’t afterthoughts. Each item is cut to order, which means the line moves at the pace of someone who cares, not someone trying to clear a ticket queue.
The catch is the hours. Gonzo’s runs a Thursday smash burger service and a Friday BBQ window from 11:30 to 3 pm, or until it sells out, which it does. Pre-orders open on the website, and regulars know to set an alarm. Showing up without a reservation on a Friday is a gamble, though the frozen boudin in the case is a solid consolation prize.
