This recipe for smashed yellow cauliflower serves 6-8 people and has become one of my favorite ways to prepare this nutritious vegetable.

Through my experimentation, I discovered that while the claimed sweeter flavor might be subtle, the real magic happens when you combine it with rich, creamy ingredients like fontina cheese and butter. The result is a dish that’s both visually striking and incredibly satisfying.

Ingredients

  • 2 heads yellow cauliflower, cut into florets
  • 1/2 cup butter
  • 1 cup fontina cheese, grated
  • 2 tablespoons fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 cup panko breadcrumbs (optional)

Instructions

    1. Bring a large pot of salted water to boil.
    2. Add cauliflower florets to boiling water.
    3. Cook until tender, about 15-20 minutes.
    4. Drain cauliflower thoroughly.
    5. Return pot with cauliflower to low heat.
    6. Add butter and let it melt.
    7. Begin mashing the cauliflower.
    8. Add minced garlic.
    9. Season with salt and pepper.
    10. Fold in grated fontina cheese.
    11. Stir until cheese is melted and incorporated.
    12. Top with fresh parsley.
    13. If using, sprinkle with toasted panko breadcrumbs.
