Ever since I discovered the delightful flavors of Vietnamese sandwiches, I’ve been hooked. The combination of French baguette with various Vietnamese fillings is a match made in heaven. After frequent visits to Hanco’s for their tofu banh mi, I decided to take the plunge and make my own. Here’s my journey to creating a homemade vegan banh mi that’s just as delicious as the professionals make it.

My adventure began at the Farmer’s Market, where I spotted a beautiful daikon radish and couldn’t resist the urge to make my own banh mi. I grabbed a daikon, some carrots, a few demi-baguettes, a sprig of cilantro, and some eggplants, and began to plan. The hardest part was making the pickled daikon and carrot, which required planning ahead but was well worth the effort.

Ingredients

  • 1 small daikon radish, sliced into matchsticks
  • 2 small carrots, sliced into matchsticks
  • ½ small cucumber, seeded and sliced into matchsticks
  • ½ jalapeño pepper, thinly sliced
  • ⅓ cup rice vinegar
  • ⅓ cup water
  • Cane sugar
  • Sea salt
  • Extra-firm tofu
  • Vegenaise (vegan mayo)
  • Sriracha sauce
  • Fresh cilantro
  • Baguette

Instructions

    1. Make Pickled Daikon and Carrots: Boil rice vinegar with salt, pepper, and sugar, then cool and refrigerate. Slice the daikon and carrots into matchsticks and soak them in the pickling liquid for at least 30 minutes.
    2. Prepare Tofu or Eggplant: Shallow-fry tofu or eggplant with salt and pepper, then glaze with sweet chili sauce.
    3. Assemble the Sandwich: Spread spicy mayo on the baguette, add tofu or eggplant, pickled vegetables, cucumber, and cilantro.
    4. Toast and Serve: Toast the baguette for a few seconds, then cut it in half for ease of eating.

Notes

For variations, you can use different proteins such as grilled pork, chicken, or mushrooms. Adding liver pate or other condiments like Maggi sauce or soy sauce can also enhance the flavor. Feel free to experiment with different fillings and enjoy making your own homemade vegan banh mi!
