Virgin Voyages is making waves in the culinary world with the debut of Rojo by Razzle Dazzle, a Spanish-inspired dining venue aboard its newest ship, Brilliant Lady. Officially launched on April 3, 2025, this innovative addition reflects Virgin Voyages‘ commitment to delivering unique, adult-exclusive experiences at sea.
A Culinary Collaboration
Rojo by Razzle Dazzle is co-helmed by acclaimed chefs Justin Severino, a four-time James Beard Award nominee, and Nate Hobart. The duo brings their expertise from Morcilla, a celebrated Spanish-style charcuteria in Pittsburgh, to the high seas. The menu features signature dishes, such as Morcilla’s legendary Oxtail Montadito—a flavorful combination of braised oxtail, caramelized onions, Mahón cheese, and crostini.
Day-to-Night Dining Transformation
During the day, Rojo offers a Spanish-American twist on brunch with dishes such as jamon croquettes paired with acai bowls and frittatas. By evening, the venue transforms into a vibrant dining experience inspired by Spain’s culinary regions. Guests can enjoy pintxos, tapas, and platos grandes in an ambiance marked by rich wooden accents and deep reddish-orange tones that evoke Spain’s communal dining traditions.
Authentic Spanish Cocktails and Wines
To complement its bold flavors, Virgin Voyages partnered with Onada Consulting from Barcelona to curate an authentic Spanish cocktail menu. Offerings include Rioja and Ribera del Duero reds, Albariños from Rías Baixas, artisanal vermouths, sangrias, and sparkling Provocativo cava spritzes.
Part of a Culinary Refresh
Rojo by Razzle Dazzle is part of a broader culinary refresh across Virgin Voyages’ fleet. Other updates include new menu items at Extra Virgin and Gunbae—the only Korean BBQ at sea—featuring kimbap rolls and bulgogi fire meat.
