A lot of people tell me that they don’t like mushrooms, but I have a sneaking suspicion that they just haven’t had them cooked properly. It’s true, sometimes mushrooms can turn out slimy (which isn’t necessarily a bad thing), but cooking them so that they are deliciously crunchy and chewy is actually really easy.
All it takes is some patience. I picked up some beautiful mushrooms while in Brighton Beach the other day, and I’ll show you just how easy it is.
Mushrooms

This recipe teaches you how to cook mushrooms perfectly by releasing their moisture and browning them in olive oil. It's easy and requires just some patience, making it suitable for any type of fresh mushroom.
Ingredients
- 8 ounces (225 grams) of mushrooms (any variety, e.g., cremini, shiitake, portobello)
- 1 tablespoon of olive oil
- Salt, to taste
- Optional: butter, garlic, thyme, lemon zest, and lemon juice for added flavor
Instructions
- Clean the mushrooms by giving them a quick rinse and then wiping them off with a paper towel to dry them and remove the dirt.
- Heat up some olive oil in a large, shallow pan over medium-high heat.
- Add the mushrooms and spread them into one layer. Let them cook undisturbed for 3-5 minutes or until they start to brown.
- Stir the mushrooms and let them cook some more until they are mostly golden brown on all sides.
- Add salt to taste and stir everything. Let the mushrooms cook for another minute or two.
- Pull the mushrooms out of the pan and enjoy them.
Notes
For additional flavor, you can add garlic, thyme, and lemon juice towards the end of cooking. Also, using different types of mushrooms can provide varying textures and flavors. It’s important to not overcrowd the pan to ensure the mushrooms cook evenly and don’t steam instead of brown.
