Ingredients

  • 2 pounds PEI mussels, cleaned and debearded
  • 8 ounces pasta (your choice of shape)
  • 1 red onion, sliced
  • 3/4 cup chicken broth (or 1 cup for extra sauce)
  • 2 tablespoons creme fraiche
  • 2 tablespoons Mike’s Hot Honey
  • 2 tablespoons olive oil or butter
  • Sea salt and freshly ground black pepper to taste
  • Crusty bread for serving

Instructions

    1. Bring a large pot of salted water to boil for pasta.
    2. Clean and debeard mussels if not already done.
    3. Cook pasta according to package directions.
    4. When pasta has 7 minutes left, heat a large pot over medium-high heat.
    5. Add oil and sliced red onions to the hot pot.
    6. Season onions with salt and pepper and cook for 2-3 minutes.
    7. Add mussels and broth when pasta has 4 minutes remaining.
    8. Cover pot and cook mussels for 2-3 minutes.
    9. Check mussels – if some are still closed, cook covered for another 30 seconds.
    10. Turn off heat when mussels are open.
    11. Add cooked pasta directly to the mussel pot.
    12. Toss everything together gently.
    13. Season with salt and pepper to taste.
    14. Divide between bowls and add broth.
    15. Top each bowl with a dollop of creme fraiche.
    16. Drizzle with Mike’s Hot Honey.

Notes

When selecting mussels, ensure they’re tightly closed and smell fresh like the ocean. Discard any mussels that are already open and don’t close when tapped, or those with broken shells. The cooking liquid can be customized – try white wine, coconut milk, or seafood broth for different flavor profiles.

This dish is best served immediately while the mussels are hot and the pasta is al dente. Have plenty of crusty bread ready to soak up the flavorful broth. Leftovers are not recommended as mussels are best enjoyed fresh.
