Ingredients

  • 1 lb king oyster mushrooms
  • 2 tbsp vegan butter or unsalted butter
  • 1/2 tsp garlic powder (optional)
  • 1/2 tsp sea salt
  • 2 cloves minced garlic
  • Lemon juice or zest (optional)
  • Fresh parsley or herbs for garnish
  • 2 large sweet potatoes
  • 1/4 cup vegan butter
  • Salt and pepper to taste

Instructions

    1. Peel and cut the sweet potatoes into chunks. Boil them in water until tender, then drain and mash with vegan butter, salt, and pepper.
    2. Slice the king oyster mushrooms into thick medallions and score them in a checkered pattern.
    3. Heat a pan over medium heat and add vegan butter. Place the mushroom “scallops” in the pan and cook for 3-4 minutes on each side until golden brown.
    4. Squeeze lemon juice into the pan and cover it to steam the mushrooms for a few minutes.
    5. Serve the mushroom “scallops” on a bed of sorrel with mashed sweet potatoes on the side.
