Pork neck fillet is a delicious and underused cut of pork that offers a tender and juicy texture, thanks to its marbling of fat. This makes it a popular choice in dim sum places, where it’s often served roasted to perfection. Here’s a simple recipe to bring this culinary delight into your home.

When I bought 2lbs worth of pork neck fillet, an inch thick from The Meat Hook, I got 3 big pieces for about $13. This is a great value, especially considering the superior taste and texture compared to regular pork chops. Jamie Oliver has a quick and simple recipe for cooking a pork neck fillet that involves sage, lemon, garlic, oil, salt, and pepper. However, I chose to keep it basic with just salt and pepper to truly appreciate the natural flavor of the pork.

Ingredients

  • 2 lbs pork neck fillet, 1 inch thick
  • Salt and pepper (basic version)
  • Optional: sage, lemon, garlic (for added flavor)

Instructions

    1. Pat dry the fillet with paper towels before seasoning.
    2. For pan-frying, cook each side for 2 minutes for a 1-inch thick fillet.
    3. For roasting, preheat the oven to 400°F (200°C) and roast for 30 minutes, flipping halfway through, or use a lower temperature (320°F/160°C) for a longer period (90 minutes) with basting.

Notes

For a more complex flavor profile, you can incorporate vegetables and liquids like onions, apples, beer, and chicken broth into your roasting method. Additionally, adding a dipping sauce made with ingredients like fish sauce, rice vinegar, and honey can enhance the dish.
