Ingredients

  • 500 grams Brussels sprouts
  • 1 ripe avocado, diced
  • 1/2 cup pork cracklings (from slow-roasted pork shoulder)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: lemon juice

Instructions

    1. Parboil the Brussels sprouts in boiling water for a few minutes until they start to soften. Drain and move them into a bowl.
    2. Drizzle olive oil over the Brussels sprouts and season with salt and pepper. Mix well.
    3. Add the pork cracklings to the bowl and mix everything together.
    4. Spread the mixture onto a baking pan and roast in the oven at 350°F until crispy, approximately 20-25 minutes.
    5. Just before serving, scoop pieces of avocado into the Brussels sprouts and crackling mixture. A squirt of lemon juice can add a nice touch.

Notes

For a variation, you can use bacon instead of pork cracklings or add garlic powder for extra flavor. Different oils like avocado oil can also be used. This recipe is versatile and can be adapted to suit various tastes and dietary needs.
